"This is the estate’s jewel, its flagship wine that’s not released until two years in the bottle have passed. The fruit is hand-harvested cool in late fall, then bunch sorted and destemmed with a four-to-six-hour cold soak before gentle pressing. Slightly settled juice is fermented cool with non-aromatic and wild yeast in stainless steel to desired dryness when fermentation is halted. It shows a light golden colour in the glass and a nose of lime peel, emerging sweet petrol, bergamot, bin apples, a subtle note of ginger and wave after wave of river-rock/saline minerality. It’s crisp, vibrant, and joyful on the palate with wild honey sweetness tempered by racy acidity, lime zest, bin apple, ginger, and savoury notes that all together is a deep, complex and minerally-driven Riesling with a fresh, saline finish. Bravo!"

VEGAN & GLUTEN-FREE
“From the Heritage series at Sperling, this traditionally made sparkler is a blend of 80% Pinot Noir and 20% Chardonnay from vines planted in 2008. Both varietals are picked early (19 Brix) for maximum freshness and finesse. After primary fermentation (no malo), the two varieties are blended to form the final cuvée. The wine is finished with no dosage added and shows only 1.9% residual sugar. The nose displays brioche/leesy/smoky/mineral notes with bright citrus, toast, apple skin and fresh, fresh, fresh waves of salinity. It’s electric on the palate with tiny, persistent beads of bubbles and electric acidity to accentuate the freshness in the mouth. Shows tension and finesse with perky citrus and apple notes on a crisp and perfectly dry finish. I suspect this highly stylistic bubbly will gain fat and more complexity if you allow it to age in your cellar. A wonderful drop.” 92 pts

“This old vine, organic Foch was planted in the 1960s by winemaker Ann Sperling’s (above) dad Bert. It produces low yields with berries that are high in concentration. It’s tight on the nose, but swirl away and it will reveal a range of cassis, anise, black currants and earth followed by earthy/forest floor notes. It’s highly structured and complex on the palate but the fruit pops with dark berries, a touch of kirsch, licorice, savoury herbs, earth and depth through a long and lively finish. History in a bottle here.” 92 pts
