2013 Blanc de Blancs
This is a single block-single batch sparkling wine from our highest elevation block of Chardonnay clone 548. Bye making a wine without dosage (no added sugar) winemaker Ann Sperling feels it best shows off the varietal character of sparkling Chardonnay. Select hand harvesting at ideal sparkling ripeness starts the process followed by whole cluster pressing. Each Cuvee is fermented to dryness, and then without malolactic is sent to a second fermentation in bottle.
Brut Reserve
“From the Heritage series at Sperling, this traditionally made sparkler is a blend of 80% Pinot Noir and 20% Chardonnay from vines planted in 2008. Both varietals are picked early (19 Brix) for maximum freshness and finesse. After primary fermentation (no malo), the two varieties are blended to form the final cuvée. The wine is finished with no dosage added and shows only 1.9% residual sugar. The nose displays brioche/leesy/smoky/mineral notes with bright citrus, toast, apple skin and fresh, fresh, fresh waves of salinity. It’s electric on the palate with tiny, persistent beads of bubbles and electric acidity to accentuate the freshness in the mouth. Shows tension and finesse with perky citrus and apple notes on a crisp and perfectly dry finish. I suspect this highly stylistic bubbly will gain fat and more complexity if you allow it to age in your cellar. A wonderful drop.” 92 pts, -Michael Godel, Wine Align
Speritz Pet Nat
It’s a bright afternoon. I’m in a bright yellow lawn chair with my feet stretched out in the grass, a tall glass of sour lemonade balanced on the chair arm. You are lying in the garden hammock, telling jokes, popping green grapes in the air and catching them as they fall. Screaming kids fly through the sprinkler, shedding water and joy. Little white butterflies flap their wings softly on the honeysuckle bushes as we laugh and reminisce about old times.
Made from 85% Perle of Csaba and 15% Chardonnay. Drink with stuffed bell peppers with chicken and fresh herbs from the garden. Pairs well with white meats and seafood.
Ruby Pet Nat
It’s a tradition that brings us together, the long table Sunday dinner. Old wood and leather chairs from throughout the farmhouse are collected together under the almond trees in the yard. You brush the week’s red dust off the table while I set out mason jars of roses from the garden. Heaping platters of roasted beets and bowls of fresh blackberries, complement whatever the family brings to add to the grill. The table is set and we hear the chatter of voices coming through the back gate.
Made from 85% Maréchal Foch and 15% Pinot Noir. Enjoy with grilled Bulgogi with brown rice, mushrooms and scallions. Pairs well with bold flavours and hearty red meat dishes.
2021 Pinot Blanc
It’s a breezy day on the ocean walk. My hair is flying and you are holding onto your peach-coloured summer hat. The windy lifts up the white waves along the shore and carries sandy droplets in, spraying all of us walking by. Brilliant sun beats down, instantly evaporating the drops on the big boulders on the shore. The petals of the wild daisies crowded between the stones glisten with salt, waving their grassy leaves back at the ocean.
Pair with fresh shucked oysters, butter lettuce salad and sourdough bread. Enjoy with delicate seafood and light cheeses.
2021 Organic Heritage Rosé
It's an industrious afternoon at Gramma's kitchen table. Gramma is chopping rhubarb, crafting another of her famous strawberry rhubarb crisps. Giggling with each other, we sort through the bucket of rose-hips she collected this morning, pulling off the tops. The citric, juicy rose-hips stain our fingers, putting up one last fight before they boil down into jelly. We sip hibiscus tea, waiting impatiently for the dessert and hoping there isn't another bucket of rose-hips.
Made from Pinot Noir. Enjoy paired with sweet barbecued ribs & fresh veggie slaw. Pairs well with salty & saucy dishes.
