New Wine Releases
Order our Natural Amber Pinot Gris now! This wine sells out fast every year. Pinot Gris whole clusters and stemmed grapes are fermented with wild yeast, and undergo wild malolactic conversion, taking sugars and malic acid to complete dryness. We press the must and let it settle, rather than fining or filtering, and do not ameliorate with additives, such as sulphites. It is not an expression of a vessel, but a savory expression of the complete Pinot Gris grape adapted over 20 years to our site.
"It's an industrious afternoon at Gramma's kitchen table. Gramma is chopping rhubarb, crafting another of her famous strawberry rhubarb crisps. Giggling with each other, we sort through the bucket of rose-hips she collected this morning, pulling off the tops. The citric, juicy rose-hips stain our fingers, putting up one last fight before they boil down into jelly. We sip hibiscus tea, waiting impatiently for the dessert and hoping there isn't another bucket of rose-hips."
Enjoy paired with sweet barbecued ribs & fresh veggie slaw. Pairs well with salty & saucy dishes.
"It’s a breezy day on the ocean walk. My hair is flying and you are holding onto your peach-coloured summer hat. The windy lifts up the white waves along the shore and carries sandy droplets in, spraying all of us walking by. Brilliant sun beats down, instantly evaporating the drops on the big boulders on the shore. The petals of the wild daisies crowded between the stones glisten with salt, waving their grassy leaves back at the ocean."
Pair with fresh shucked oysters, butter lettuce salad and sourdough bread. Enjoy with delicate seafood and light cheeses.
West Coast Refinement
Elegant West Coast refinement describes this wine beautifully. Classic Pinot Noir.
Enjoy with roasted organic chicken, including salty roasted potatoes smothered in drippings.
"This organic Pinot Noir Rosé presents concentrated aromas of red cherry, strawberry & rhubarb.The palate reveals a fine-boned tannin structure that encapsulates red berry & tart red cherry notes & lively acidity. There's ruby grapefruit on a long, dry finish. Well structured & beautifully balanced; a serious and seriously delicious rosé!"

Vision Series Rosé - made from Pinot Noir clone 777, this block is favoured for its slightly darker skinned berries and strawberry and bramble fruit aromas. Hand harvested grapes were gently whole cluster pressed, and fermented in two barrels. Bottled dry in March under screwcap to capture the fresh berry profile of this west facing block of vines. Enjoy as a starter and continue into your main with herb infused, steamed mussels or your favourite seasonal risotto. Delish!
Sperling Vineyards Vision Series Brut Reserve 2010 ($115, 94 points) — The blend for this fascinating, long-lees aged, traditionally made sparkling wine is 70% Pinot Noir and 30% Chardonnay and made with zero dosage. Right out of the glass, this thrilling bubble shows the complexity that an extended lees aged wine brings to the party, with autolytic notes right off the top followed by creamy brioche, lemon tart, mulled apples, a gentle, elegant bead, and lovely saline/oyster shell accents in a seductive, multi-dimensional style. Such vim and vigour on the palate for a wine of this age with toasty/bready notes, a creamy, yet vital, texture, a soft, elegant bead, lemon, pear, green apple, subtle savoury berries, flinty/autolytic notes, and mouth-watering acidity keeping this perfectly mature wine vibrant through the finish. What a treat!

ORGANIC, VEGAN & GLUTEN-FREE
“This old vine, organic Foch was planted in the 1960s by winemaker Ann Sperling’s (above) dad Bert. It produces low yields with berries that are high in concentration. It’s tight on the nose, but swirl away and it will reveal a range of cassis, anise, black currants and earth followed by earthy/forest floor notes. It’s highly structured and complex on the palate but the fruit pops with dark berries, a touch of kirsch, licorice, savoury herbs, earth and depth through a long and lively finish. History in a bottle here.” 92 pts
