Order our Natural Amber Pinot Gris now! This wine sells out fast every year. Pinot Gris whole clusters and stemmed grapes are fermented with wild yeast, and undergo wild malolactic conversion, taking sugars and malic acid to complete dryness. We press the must and let it settle, rather than fining or filtering, and do not ameliorate with additives, such as sulphites. It is not an expression of a vessel, but a savory expression of the complete Pinot Gris grape adapted over 20 years to our site.
"It's an industrious afternoon at Gramma's kitchen table. Gramma is chopping rhubarb, crafting another of her famous strawberry rhubarb crisps. Giggling with each other, we sort through the bucket of rose-hips she collected this morning, pulling off the tops. The citric, juicy rose-hips stain our fingers, putting up one last fight before they boil down into jelly. We sip hibiscus tea, waiting impatiently for the dessert and hoping there isn't another bucket of rose-hips."
Enjoy paired with sweet barbecued ribs & fresh veggie slaw. Pairs well with salty & saucy dishes.
Try our NEW natural, orange wine called FLINT! Our Vidal grapes, grown in The Labyrinth vineyard were hand-harvested on October 30, 2021 in ideal conditions. Whole cluster fermented, pressed after 25 days on skins and stems and allowed to settle for 3.5 months without fining, filtering, or added sulphites. It is completely dry and alive. It will evolve and change almost continuously. Taste the Labyrinth!

"It’s a breezy day on the ocean walk. My hair is flying and you are holding onto your peach-coloured summer hat. The windy lifts up the white waves along the shore and carries sandy droplets in, spraying all of us walking by. Brilliant sun beats down, instantly evaporating the drops on the big boulders on the shore. The petals of the wild daisies crowded between the stones glisten with salt, waving their grassy leaves back at the ocean."
Pair with fresh shucked oysters, butter lettuce salad and sourdough bread. Enjoy with delicate seafood and light cheeses.
"The Vision Series Pinot Noir was planted in 2008 on blocks noted for their calcium-limestone-rich clay soils...The intriguing nose begins with notes of forest floor and late autumn leaves and opens to a melange of savoury red berries, beetroot, nutmeg and spice notes that are fully integrated. It’s silky smooth on the palate with ripe and savoury black raspberries, cherry tart, anise, sage, earthy notes, spice, and a long finish fuelled by mouth-watering acidity. Beautiful, complex and cellar-worthy Pinot Noir." 93 points, Rick VanSickle, Wines in Niagara

Winemaking: We hand harvested and sorted across our vibrating sorting table. 25% of the stemmed grapes were skin fermented with wild yeast for 2-3 days, then pressed to give more depth and texture to the final wine. The two lots were blended collaboratively with Ann Sperling and Julie Peglau who chose to include a tiny percentage of Riesling from our 1978 planting.
"It’s crisp, vibrant, and joyful on the palate with wild honey sweetness tempered by racy acidity, lime zest, bin apple, ginger, and savoury notes that all together is a deep, complex and minerally-driven Riesling with a fresh, saline finish. Bravo!"

“There is no dosage in this directly motivational Blanc de Blancs and plenty of potential palate weight with thanks to 30 months spent on the lees. There is something top single-vineyard cru Alsatian about the savoury and searing coolness in this style, as if it were more than just the sum of chardonnay parts, like some hypothetical pinot blanc and perhaps auxerrois. There is some reductiveness, a lovely washed rind cheese, lemon scrape melted into curd and fine bitters. The flavours are really quite lemony tart. Striking really....you have to admire Ann Sperling's "decision based on lees contact time." ... 92 pts
