2017 Organic Vision Chardonnay

Growing Conditions
Our Chardonnay vines are grown on deep, calcium-rich clay soils with ultra-fine limestone particles. Our deeply rooted vines find their own water and nutrients while capturing the essence of the vintage.
Winemaking
Select blocks were hand-harvested on cool September mornings at 13% potential alcohol. Gently whole cluster pressed; settles juice is transferred to 500L French oak puncheons to wild ferment and complete a native malolactic fermentation. Select barrels were blended and bottled after 11 months of aging on lees. Batonnage was employed 6 times during barrel aging.
Food Pairing
Drink with grilled fish; caramelized onion tart with salty accents like anchovies, or mushroom ragout. Pairs well with rich dishes.
